Time to Grill and Chill!

‘Tis the season for unsticking thighs from plastic chairs! YES, it’s finally that time again! SUMMER IS HERE! And you know what that means?
Water gets warmer. Drinks get colder. Music gets louder. Nights get longer. Life gets better. And food is out of this world!
That’s right! It’s grilling time! If you’re looking for a “Go To” meal with friends, I have the ones for you!
Let’s not delay, I’m sure you’re making your grocery list in your head as you read this. Here’s what you’ll need:
- Ground Beef
- Salt and Pepper
- Onion Powder
- Garlic Powder
- Dried Basil
- BBQ Sauce
- Monterey Jack Cheese (Shredded)
- Cheddar Cheese (Shredded)
- Parmesan Cheese
- Red and White Onion
- Chopped Carrots
- Red Bell Pepper
- Fresh Parsley
- Baby Red Potatoes
- Burger buns (sesame seeds)
- Elbow Macaroni
- Olive Oil
- Litehouse Ranch Dressing
- Hellman’s Mayo
- Fat Free or Low Fat Greet Yogurt
- White Wine Vinegar
- Dijon Mustard
I know that was a pretty long list but it’s for a good reason. Here’s what we’re going to make, and don’t worry, it’s easy!
- The Perfect Burger
- Corn on the Cob
- Ranch Potatoes
- Summer Macaroni Salad
- Refreshing Infused Water
The Perfect Burger
Ingredients: Ground Beef, Black Pepper, Onion Powder, BBQ Sauce, Monterey Jack Cheese, Salt (to taste)
Toppings: Lettuce, Tomato, and Onion
Creating this delicious burger takes only a little time to make. Mix ground beef with additional ingredients, then mold into burger shape. Use cooking spray before placing burgers on grill to avoid sticking. Cook burger to desired temperature.
Corn on the Cob
Ingredients: Corn, Salt, Butter, Olive Oil, Parmesan Cheese, and Dried Basil, Garlic Powder
Other: Tin Foil
Place corn in foil boats (maximum 4 per boat). Mix additional ingredients in bowl, and then coat cobs before covering with foil. Cook corn on grill for about 30-35 minutes at 400 degrees.
Ingredients: Baby red potatoes, Litehouse Ranch Dressing, Bacon, Cheddar cheese, Fresh parsley, salt and pepper (to taste)
Wash and cut potatoes. Cook and crumble bacon. Layering potatoes with additional ingredients in foil boat, covering before cooking. Cook for 15-20 minutes.
Summer Macaroni Salad
Ingredients: Elbow macaroni, hard-boiled eggs, chopped carrots, red bell pepper, celery, red onion, fresh parsley
Other: ½ cup Mayo, ½ cup Fat Free or Low Fat yogurt, 1 ½ tbsp. white wine vinegar, 2 tsp. Dijon mustard, 2 tsp. honey, salt and pepper (to taste)
Prepare by cooking macaroni and let cool before mixing. Chop hard-boiled eggs, carrots, red pepper celery, red onion and parsley. Once macaroni is cooled, mix all ingredients. Refrigerate when finished.
Refreshing Infused Water
Ingredients: Water, Ice Cubes, Strawberries, Limes, and Cucumber, Mint
Cut Strawberries, Limes, Cucumbers and Mint. Place in large pitcher, add water and ice and enjoy!
